Our Special Selection has also arrived on Vialone Rice. Ours is highly selected and we go directly to the rice mill to buy it. Vialone is a slightly finer rice than the better known Carnaroli rice. This allows the Vialone variety to cook in less time but at the same time not to overcook. In short, we can get an excellent risotto by reducing the cooking time, which is not at all obvious!
We buy the rice directly from the producer and then pack it in our factory in Villar San Costanzo.
Vialone grain is slightly smaller and can also be used in soups. Putting two handfuls inside the vegetable soup makes it more lovable even for the little ones, always difficult to eat the healthy minestrone!
A tip: the recipe for "flight"; Pumpkin risotto: just take fresh pumpkin, a pinch of thyme, a pinch of mascarpone, thyme and aromatic herbs you have at home. Cook the pumpkin creating a sauce; once cooked with water, insert the risotto and add more water for cooking. Finish with creaming of mascarpone and aromatic herbs to taste. Yeah, don't forget the salt, just a tip!
