Biscuits high in fibre, like the spelt and apple biscuit, are not that easy to be found in the market. We use only some spelt varieties, cleverly mixed in the mill by our miller Fabrizio Cavanna. These varieties are Spelta and Dicoccum. The first variety is more modern, easily workable. The second variety is the most ancient one: there are evidences it was already used in the time of the Roman Empire.
The presence of spelt in the recipe enhances the flavor and the aroma of the apple pulp we use. Did you know? This biscuit is made with apple pulp produced in Cuneo province, while the flour is entirely ground in our mill (Mulino della Riviera di Dronero).
Our goal is to offer a healthy and nuritious biscuit. The wholemeal spelt is carrying lots of fibre, which retains nourishment and releases sugars way slower than in a normal biscuit.

Ingredients: 60% wholemeal SPELT flour, raw cane sugar, 15% apple pure, BUTTER, sunflower oil, fresh EGGS, sugar, raising agent: ammonium hydrogen carbonate, salt.
