Spelt is an ancient cereal and evidence of its use has arrived since the times of the ancient Romans. Wholemeal spelt flour was already used at the time for the production of different types of bread to take with you during wars and movements within the empire. This cereal reaches us today with few differences since then; even today the grain is the same and the properties are, as always, exceptional.
We grind the spelt inside our Mulino della Riviera, we get a raw and wholemeal flour just as it comes down from the mill and we use it 100% inside this biscuit.
However, you should know that there are different varieties of spelt. Ours is composed of a mixture of Dicoccum (the oldest spelt) together with Spelta (a more modern species suitable for processing). We therefore try to mix tradition and innovation in order to obtain a workable but at the same time very digestible biscuit.
This biscuit is also made special by the Apple Pulp, produced right here in the province of Cuneo. The flavor of the apple melts and binds in an excellent way together with whole spelt!
