Pearl spelt is one of the oldest cereals in the world. The ancestor of wheat is also called.
It is not for nothing that Roman soldiers used it as the main course during the war campaigns.
Spelt looks like a highly digestible cereal and is rich in nutrients including vitamins A and B and also a high protein content compared to its wheat, rye and barley.
Triticum dicoccum as it was once called can be used in different ways in your kitchen:
with a 45-minute boil you can eat it comfortably as a boiled rice, you will have a great advantage though: large amount of fiber and much lower calorie intake.
by letting it come cold instead you can make us a delicious salad called Farzotto! Enrich it with mixed vegetables, green beans, peas, carrots and courgettes. Excellent vegetarian recipe.
A tip: the cooking is too long? Soak the spelt for 5-6 hours and you can shorten the cooking in just 15 minutes! Less time spent - less gas - less pollution!
Whoever sows good wheat, then has good bread; whoever sows lupine has neither bread nor wine.
