Ammonium bicarbonate is a leavening agent: it is mainly used in the preparation of biscuits because, during cooking, it guarantees a rapid growth of the dough and produces a fine holes that give the cakes a perfect consistency and appearance, making them more friable.
It is normal that during the cooking a strong smell is released; this does not have to worry because it will absolutely not remain on the biscuits, vanishing as soon as they have cooled.
Suitable for preparations of dry cakes, in particular biscuits and not for leavened cakes that must be soft.
