Fiber-rich biscuits like these are not found very easily on the market. We only use some varieties of spelled, expertly mixed by our Miller Fabrizio Cavanna. These varieties are Spelta and Dicocco or Dicoccum.
The first is a more modern type of spelled, very workable and usable; the second, on the other hand, is much older, even tracing its use back to the time of the Roman Empire.
The taste of Spelled, inside this mixture, enhances the flavor and taste of the Apple pulp that we use. Did you know that? This biscuit is made with Apple pulp produced here in the province of Cuneo precisely in the Saluzzo area while the Flour is entirely produced inside our Riviera Mill in Dronero.
Our goal is to give you a healthy and nutritious biscuit. Being spelled whole and rich in fiber, it retains a lot of nourishment and releases the sugars present inside the biscuit much more slowly than a normal shortbread.
